Grilled Fish

Ingredients

  • 3 whole fresh tout

  • 1 teaspoon red pepper flakes

  • 1 lemon

  • 5 tablespoons of olive oil

  • 3 tablespoons minced garlic

  • 1 handful chopped rosemary

  • 1 handful thyme

  • BBQ sauce

  • Salt and black pepper

Method

  • Cut the lemon into small slices and combine it with olive oil, thyme, rosemary, garlic and red pepper flakes.

  • Genuinely season the trout with salt and pepper both inside and out.

  • Stuff the trout well with lemon mixture and marinate for 45-60 minutes.

  • Preheat your Lanka Grills BBQ for 10 minutes and apply oil throughout the cooking grates.

  • Grill the trout for 4-6 minutes each side and brush the BBQ sauce halfway through.

  • Let it rest for 4 minutes and serve.

GARLIC GRILLED SHRIMP

Ingredients

  • 1 pound shrimp peeled and deveined

  • 4 cloves garlic minced

  • 1/3 cup olive oil

  • 2 tablespoons chopped parsley

  • 1 tablespoon fresh basil chopped

  • 2 teaspoons lemon juice

  • 1 tablespoon tomato paste

  • ½ teaspoon salt

  • 1½ teaspoon black pepper

  • Garlic Butter

  • 1 clove garlic minced

  • 1¼ cup butter melted

  • 1 teaspoon parsley chopped

Method

  • Combine all marinade ingredients in a bowl and whisk. Allow shrimp to marinate at least 20 minutes.

  • Preheat grill to medium heat.

  • Thread shrimp on skewers, grill 2-3 minutes per side. Remove from skewers and place in a serving bowl. (If wooden skewers are used soak in water for 20 minutes.)

  • Drizzle with garlic butter and serve warm.
