Grilled Fish
Ingredients
3 whole fresh tout
1 teaspoon red pepper flakes
1 lemon
5 tablespoons of olive oil
3 tablespoons minced garlic
1 handful chopped rosemary
1 handful thyme
BBQ sauce
Salt and black pepper
Method
Cut the lemon into small slices and combine it with olive oil, thyme, rosemary, garlic and red pepper flakes.
Genuinely season the trout with salt and pepper both inside and out.
Stuff the trout well with lemon mixture and marinate for 45-60 minutes.
Preheat your Lanka Grills BBQ for 10 minutes and apply oil throughout the cooking grates.
Grill the trout for 4-6 minutes each side and brush the BBQ sauce halfway through.
Let it rest for 4 minutes and serve.
GARLIC GRILLED SHRIMP
Ingredients
1 pound shrimp peeled and deveined
4 cloves garlic minced
1/3 cup olive oil
2 tablespoons chopped parsley
1 tablespoon fresh basil chopped
2 teaspoons lemon juice
1 tablespoon tomato paste
½ teaspoon salt
1½ teaspoon black pepper
Garlic Butter
1 clove garlic minced
1¼ cup butter melted
1 teaspoon parsley chopped
Method
Combine all marinade ingredients in a bowl and whisk. Allow shrimp to marinate at least 20 minutes.
Preheat grill to medium heat.
Thread shrimp on skewers, grill 2-3 minutes per side. Remove from skewers and place in a serving bowl. (If wooden skewers are used soak in water for 20 minutes.)
Drizzle with garlic butter and serve warm.
