1 pound fresh sausage (Any Flavor)
1 tablespoon pepper
3 tablespoons onion powder
2 tablespoons mustard
1 tablespoon salt
1 teaspoon cinnamon
3 tablespoons olive oil
Add the ingredients in a food processor or mortar, mix all the ingredients together.
Place the sausage in the food processor, pour the marinade over the sausage and turn to coat them on all sides and marinate for 30 minutes.
Preheat your Lanka Grills BBQ for 15 minutes. If using charcoal, light the charcoal at least 30 minutes prior to grilling, and oil the cooking grates.
Once the grill is hot, place the sausage directly on the indirect heat side of the grill, arranging the sausage as close to the direct heat as possible without being directly over the flame. The heat from the direct heat side of the grill will circulate around the sausage, cooking them with really gentle indirect heat. After 4-5 minutes, flip the sausage, & cook over indirect heat for another 4-5 minutes,
Transfer the sausage to the direct heat. Grill 2-3 minutes per side, until charred as desired.
Transfer to a plate to rest & cool slightly before serving. Serve the grilled sausage with all of your favorite toppings.
1 papaya, peeled and deseeded, roughly chopped
1 small red onion, finely chopped
Juice of 1 lime
1 tablespoon light soy sauce
Small pinch of golden caster sugar
1 level tablespoon freshly chopped coriander
900 g thick sausages
6 tablespoon runny honey
4 teaspoon Cajun seasoning
2 tablespoon light soy sauce
To make the sambal, put the papaya, red onion, lime juice, soy sauce, sugar and coriander in a bowl. Season well to taste and mix together. Cover and chill for at least 30min or up to 24hr.
Preheat the grill for 15 mins in medium heat.
Cook the sausages on the barbecue for 10-15min or until they’re well browned and almost cooked. Put in a large shallow dish.
Mix together the honey, Cajun seasoning and soy sauce. Pour over the sausages and mix well.
Return the sausages to the barbecue for 3-4min, brushing over any remaining marinade as they finish cooking.
Transfer to a plate to rest & cool slightly before serving. Serve the grilled sausage with all of your favorite toppings and sambal.
